Vegan Veggie Bowl
Ingredients:
- 1 cup mixed vegetables (broccoli, carrots, bell peppers), chopped
- 1 large onion, sliced
- 2 garlic cloves, minced
- 2 tbsp olive oil
- 2 tbsp EhuruAja spice blend
- ½ cup water or vegetable broth
- Optional: Pinch of smoky mix
- Cooked quinoa or rice to serve
Instructions:
- Sauté: In a pan, heat olive oil; sauté onion and garlic until soft.
- Add Veggies: Mix in the chopped vegetables and sprinkle with EhuruAja.
- Simmer: Add water/broth, cover, and cook 7–10 minutes until tender.
- Finish: Stir in smoky mix if desired; serve over quinoa or rice.
