Vegan Chili
Ingredients:
- 1 can kidney beans, drained and rinsed
- 1 can black beans, drained and rinsed
- 1 large onion, chopped
- 2 garlic cloves, minced
- 1 red bell pepper, diced
- 1 can diced tomatoes (400 g)
- 2 tbsp (Ifvenli) spice blend
- 1 cup vegetable broth
- 1 tbsp olive oil
- Optional: A dash of smoky mix
- Fresh lime wedges for serving
Instructions:
- Sauté: In a large pot, heat olive oil and cook onion and garlic until translucent.
- Combine: Add bell pepper, (Ifvenli) blend, diced tomatoes, beans, and vegetable broth. Stir well.
- Simmer: Bring to a boil, then reduce heat and simmer for 20 minutes until the chili thickens.
- Finish: Stir in smoky mix if desired, serve with lime wedges, and enjoy a hearty vegan meal.
