Pork Medallions with Apple Glaze
Ingredients:
- 500 g pork tenderloin, sliced into medallions
- 1 small onion, thinly sliced
- 2 tbsp (IheAzu) spice blend
- 1/2 cup apple cider
- 1 tbsp olive oil
- Salt and pepper to taste
Instructions:
- Season: Rub pork medallions with (IheAzu) spice blend, salt, and pepper.
- Sauté: Heat oil in a skillet and cook the medallions for 3–4 minutes per side until golden.
- Glaze: Remove medallions; add onion to the pan and sauté briefly. Pour in apple cider, scraping up browned bits.
- Simmer: Return pork to the skillet and simmer for 2 minutes.
- Serve: Plate with a drizzle of apple glaze and your choice of sides.
