Pork Medallions with Apple Glaze

Ingredients: 
  • 500 g pork tenderloin, sliced into medallions
  • 1 small onion, thinly sliced
  • 2 tbsp (IheAzu) spice blend
  • 1/2 cup apple cider
  • 1 tbsp olive oil
  • Salt and pepper to taste
Instructions:
  1. Season: Rub pork medallions with (IheAzu) spice blend, salt, and pepper.
  2. Sauté: Heat oil in a skillet and cook the medallions for 3–4 minutes per side until golden.
  3. Glaze: Remove medallions; add onion to the pan and sauté briefly. Pour in apple cider, scraping up browned bits.
  4. Simmer: Return pork to the skillet and simmer for 2 minutes.
  5. Serve: Plate with a drizzle of apple glaze and your choice of sides.
