Baked Fish with Citrus

Ingredients: 
  • 4 white fish fillets (e.g., cod or halibut)
  • 1 large onion, thinly sliced
  • 2 garlic cloves, minced
  • 2 tbsp (IheAzu) spice blend
  • Juice and zest of 1 orange
  • 1 tbsp olive oil
  • Salt and pepper to taste
Instructions:
  1. Prepare Fillets: Preheat oven to 200°C (400°F). Place fish fillets in a baking dish.
  2. Season: Drizzle with olive oil, then sprinkle (IheAzu) blend, orange zest, and minced garlic over the fish. Top with onion slices.
  3. Bake: Squeeze orange juice over and bake for 15–20 minutes until fish flakes easily.
  4. Serve: Garnish with fresh herbs and serve with steamed vegetables.
