Vegan Sweet Potato Stew

Ingredients: 
  • 2 large sweet potatoes, peeled and cubed
  • 1 can (400 g) diced tomatoes
  • 1 large onion, chopped
  • 2 garlic cloves, minced
  • 2 tbsp (IheAzu) spice blend
  • 3 cups vegetable broth
  • 1 tbsp olive oil
  • Spinach leaves for garnish
Instructions:
  1. Sauté Aromatics: In a large pot, heat olive oil over medium heat. Add onion and garlic; sauté until soft.
  2. Add Sweet Potatoes: Stir in the cubed sweet potatoes and (IheAzu) spice blend.
  3. Simmer: Pour in diced tomatoes and vegetable broth. Bring to a boil, then reduce heat.
  4. Cook: Cover and simmer for 25–30 minutes until sweet potatoes are tender.
  5. Finish: Stir in a handful of spinach until wilted. Serve hot with crusty bread.
