Coconut Pork Roast

Ingredients: 
  • 1 kg pork shoulder or loin
  • 1 large onion, quartered
  • 3 garlic cloves, smashed
  • 2 tbsp (NtuUto) spice blend
  • 1 cup chicken broth
  • 1 can (400 ml) coconut milk
  • 1 tbsp olive oil
  • Optional: A sprinkle of smoky mix
Instructions:
  1. Season & Sear: Rub the pork with the (NtuUto) blend. In a roasting pan, heat olive oil and sear the pork on all sides.
  2. Add Aromatics: Place onion and garlic around the meat.
  3. Roast: Pour in chicken broth and coconut milk. Cover with foil and roast in a preheated oven at 180°C (350°F) for 2–2.5 hours until tender.
  4. Finish: Optionally sprinkle a bit of smoky mix before serving with steamed vegetables or rice.
