Baked Coconut Fish
Ingredients:
- Whole fish or fillets (such as cod or tilapia)
- 1 large onion, thinly sliced
- 2 garlic cloves, minced
- 2 tbsp (NtuUto) spice blend
- 1 can (400 ml) coconut milk (use part of it)
- 1 tbsp olive oil
- Salt and pepper to taste
- Optional: A light sprinkle of smoky mix
Instructions:
- Preheat & Prepare: Preheat your oven to 200°C (400°F). Place fish fillets in a baking dish.
- Season: Drizzle with olive oil, then evenly distribute the (NtuUto) blend, garlic, and onion slices over the fish.
- Bake: Pour a little coconut milk over the fish, season with salt and pepper, and bake for 15–20 minutes until the fish flakes easily.
- Finish: Optionally sprinkle smoky mix over the top and serve with steamed greens.
