Baked Coconut Fish

Ingredients: 
  • Whole fish or fillets (such as cod or tilapia)
  • 1 large onion, thinly sliced
  • 2 garlic cloves, minced
  • 2 tbsp (NtuUto) spice blend
  • 1 can (400 ml) coconut milk (use part of it)
  • 1 tbsp olive oil
  • Salt and pepper to taste
  • Optional: A light sprinkle of smoky mix
Instructions:
  1. Preheat & Prepare: Preheat your oven to 200°C (400°F). Place fish fillets in a baking dish.
  2. Season: Drizzle with olive oil, then evenly distribute the (NtuUto) blend, garlic, and onion slices over the fish.
  3. Bake: Pour a little coconut milk over the fish, season with salt and pepper, and bake for 15–20 minutes until the fish flakes easily.
  4. Finish: Optionally sprinkle smoky mix over the top and serve with steamed greens.
