Spiced Beef & Tomato Stew

Ingredients: 
  • 600 g beef stew meat, cut into cubes
  • 1 large onion, roughly chopped
  • 3 garlic cloves, minced
  • 2 tomatoes, chopped (or 400 g canned diced tomatoes)
  • 2 tbsp (Ofve Opupa Okpoo) spice blend
  • 1 cup beef broth
  • 1 tbsp oil
  • Optional: A pinch of smoky mix
Instructions:
  1. Brown the Meat: Heat oil in a heavy pot over medium-high heat. Brown beef cubes on all sides.
  2. Sauté Aromatics: Add the onion and garlic; cook until softened.
  3. Simmer: Stir in the spice blend and tomatoes, then pour in the beef broth. Bring to a boil, reduce heat, and cover.
  4. Cook: Let simmer for 1.5–2 hours until the beef is tender.
  5. Finish: Optionally, stir in a pinch of smoky mix before serving. Enjoy with rice or crusty bread.
