Beef Ragout
Ingredients:
- 600 g beef stew meat, cut into cubes
- 1 large onion, chopped
- 3 garlic cloves, minced
- 1 red chilli, sliced (adjust to taste)
- 2 tomatoes, chopped (or 400 g canned diced tomatoes)
- 2 tbsp (OseOji Okpoo) spice blend
- 1 cup beef broth
- 1 tbsp olive oil
- Optional: A pinch of smoky mix
- Fresh parsley for garnish
Instructions:
- Brown the Beef: Heat olive oil in a heavy pot over medium-high heat. Add beef cubes and brown them on all sides.
- Sauté Aromatics: Add chopped onion, garlic, and chilli. Sauté until soft.
- Combine: Stir in the spice blend and tomatoes. Pour in beef broth and bring to a simmer.
- Simmer: Cover and cook on low heat for 1.5–2 hours until the beef is tender.
- Finish: If desired, stir in a pinch of smoky mix. Garnish with fresh parsley and serve with rice or crusty bread.
