Vegetable Tagine
Ingredients:
- 1 large onion, chopped
- 2 garlic cloves, minced
- 1 eggplant, cubed
- 1 zucchini, sliced
- 2 tomatoes, chopped (or 400 g canned)
- 2 tbsp (OseUto) spice blend
- 1 cup vegetable broth
- 1 tbsp olive oil
- Optional: A pinch of smoky mix
- Fresh cilantro for garnish
Instructions:
- Sauté: In a heavy pot, heat olive oil over medium heat; cook onion and garlic until soft.
- Add Vegetables: Stir in eggplant, zucchini, tomatoes, and the spice blend.
- Simmer: Pour in vegetable broth, add optional smoky mix, cover, and simmer for 20 minutes until vegetables are tender.
- Serve: Garnish with fresh cilantro and serve with couscous or flatbread.
