Spiced Vegetable Paella

Ingredients: 
  • 1 large onion, chopped
  • 2 garlic cloves, minced
  • 1 red bell pepper, diced
  • 1 cup diced tomatoes (or 400 g canned)
  • 1 cup short-grain rice
  • 2 tbsp (OsoNri) spice blend
  • 3 cups vegetable broth
  • 1 cup frozen peas
  • 1 tbsp olive oil
  • Optional: A dash of smoky mix
  • Fresh parsley for garnish
Instructions:
  1. Sauté Base: In a large, deep pan, heat olive oil over medium heat. Sauté onion and garlic until soft.
  2. Layer Flavours: Stir in bell pepper, diced tomatoes, and the (OsoNri) blend (plus optional smoky mix).
  3. Cook Rice: Add rice and vegetable broth. Bring to a simmer and cook for 15 minutes.
  4. Finish: Stir in frozen peas and cook for another 5 minutes. Garnish with parsley and serve.
