Spiced Vegetable Paella
Ingredients:
- 1 large onion, chopped
- 2 garlic cloves, minced
- 1 red bell pepper, diced
- 1 cup diced tomatoes (or 400 g canned)
- 1 cup short-grain rice
- 2 tbsp (OsoNri) spice blend
- 3 cups vegetable broth
- 1 cup frozen peas
- 1 tbsp olive oil
- Optional: A dash of smoky mix
- Fresh parsley for garnish
Instructions:
- Sauté Base: In a large, deep pan, heat olive oil over medium heat. Sauté onion and garlic until soft.
- Layer Flavours: Stir in bell pepper, diced tomatoes, and the (OsoNri) blend (plus optional smoky mix).
- Cook Rice: Add rice and vegetable broth. Bring to a simmer and cook for 15 minutes.
- Finish: Stir in frozen peas and cook for another 5 minutes. Garnish with parsley and serve.
