Citrus Grilled Fish
Ingredients:
- Whole fish (e.g., snapper or tilapia)
- 2 tbsp (Sutu Okpoo) spice blend
- 1 tbsp olive oil
- Juice and zest of 1 lemon
- Salt and pepper, to taste
- Optional: A light brush of smoky mix
Instructions:
- Marinate: Rub fish fillets with olive oil, lemon zest and juice, (Sutu Okpoo) blend, salt, pepper, and optional smoky mix. Let marinate for 10 minutes.
- Grill: Grill on medium-high heat for 3–4 minutes per side until the fish is opaque and flaky.
- Serve: Serve with extra lemon wedges and a side of steamed greens.
