Turkey Stuffed Zucchini Boats
Ingredients:
- 500 g ground turkey
- 4 medium zucchinis, halved lengthwise and seeded
- 1 small onion, finely chopped
- 2 garlic cloves, minced
- 2 tbsp (Sutu Okpoo) spice blend
- 1/2 cup diced tomatoes
- 1 tbsp olive oil
- Salt and pepper, to taste
- Optional: A dash of smoky mix
- Fresh basil for garnish
Instructions:
- Preheat Oven: Set oven to 190°C (375°F).
- Prepare Filling: In a skillet, heat olive oil over medium heat. Sauté onion and garlic until soft; add ground turkey and cook until lightly browned. Stir in diced tomatoes, (Sutu Okpoo) blend, salt, pepper, and optional smoky mix.
- Stuff Zucchinis: Spoon the turkey mixture into the zucchini halves.
- Bake: Place in a baking dish and bake for 25 minutes until zucchinis are tender.
- Serve: Garnish with fresh basil and serve warm.
