Beef Satay with Peanut-Coconut Sauce
Ingredients:
- 500 g beef sirloin, cut into thin strips
- 2 tbsp (Umimi) spice blend
- 1 tbsp lime juice
- 1 tbsp olive oil
- Wooden skewers (soaked for 30 minutes)
- For the Sauce:
- 1/2 cup coconut milk
- 2 tbsp peanut butter
- 1 garlic clove, minced
- 1 tsp grated ginger
- Optional: A pinch of smoky mix
Instructions:
- Marinate: Toss beef strips with the (Umimi) blend, lime juice, and olive oil. Let marinate for 20 minutes.
- Skewer: Thread the beef onto skewers.
- Grill: Grill over medium-high heat for 4–5 minutes per side until just cooked.
- Prepare Sauce: In a small saucepan, gently heat coconut milk, peanut butter, garlic, and ginger until smooth; stir in optional smoky mix.
- Serve: Drizzle the sauce over skewers or serve on the side with a garnish of fresh herbs.
