Chicken Jalfrezi

Ingredients: 
  • 4 boneless, skinless chicken thighs, cut into strips
  • 1 large onion, sliced
  • 1 red bell pepper, sliced
  • 2 garlic cloves, minced
  • 1 tbsp grated ginger
  • 2 tomatoes, diced (or 400 g canned diced tomatoes)
  • 2 tbsp (Umimi) spice blend
  • 1/2 cup chicken broth
  • 1 tbsp vegetable oil
  • Optional: A dash of smoky mix
  • Fresh basil for garnish
Instructions:
  1. Sauté Chicken: In a wok, heat vegetable oil over high heat. Add chicken strips and stir-fry until lightly browned.
  2. Add Veggies: Add onion, bell pepper, garlic, and ginger; stir-fry for 3 minutes.
  3. Combine: Stir in tomatoes and the (Umimi) blend; add chicken broth and optional smoky mix.
  4. Simmer: Cook for another 5 minutes until the chicken is fully cooked and flavours meld.
  5. Serve: Garnish with fresh basil and serve with steamed rice.
