Spiced Fish Tagine

Ingredients: 
  • Whole fish or fillets (such as cod or halibut)
  • 1 large onion, sliced
  • 2 garlic cloves, minced
  • 2 tomatoes, chopped (or 400 g canned diced tomatoes)
  • 2 tbsp (Umimi) spice blend
  • 1 cup fish or vegetable broth
  • 1 tbsp olive oil
  • Optional: A dash of smoky mix
  • Fresh basil for garnish
Instructions:
  1. Prepare Base: In a tagine or deep pot, heat olive oil and sauté onion and garlic until soft.
  2. Layer Flavours: Add tomatoes and the (Umimi) blend, stirring for 1 minute. Pour in broth and add optional smoky mix.
  3. Add Fish: Nestle fish fillets into the sauce, cover, and simmer for 10 minutes until fish is tender.
  4. Serve: Garnish with fresh basil and serve with couscous.
