Baked Fish with Tomato Relish

Ingredients: 
  • Whole white fish or fillets (such as cod or tilapia)
  • 2 tbsp (OseUto) spice blend
  • 1 large tomato, diced
  • 1 small onion, finely chopped
  • 1 garlic clove, minced
  • 1 tbsp olive oil
  • Salt and pepper, to taste
  • Optional: A sprinkle of smoky mix
Instructions:
  1. Preheat Oven: Heat your oven to 200°C (400°F).
  2. Prepare Relish: In a bowl, combine diced tomato, onion, garlic, and a pinch of salt.
  3. Season Fish: Place fish fillets in a baking dish, drizzle with olive oil, and rub with the (OseUto) blend and optional smoky mix.
  4. Bake: Top with the tomato relish and bake for 15–20 minutes until the fish flakes easily.
  5. Serve: Garnish with fresh herbs and serve with steamed rice.
