Beef Tagine with Apricots

Ingredients: 
  • 600 g beef stew meat, cut into cubes
  • 1 large onion, chopped
  • 3 garlic cloves, minced
  • 1 tbsp grated ginger
  • 2 tomatoes, roughly chopped (or 400 g canned diced tomatoes)
  • 1 cup beef broth
  • 150 g dried apricots, halved
  • 2 tbsp (Umimi) spice blend
  • 1 tbsp olive oil
  • Optional: A pinch of smoky mix
  • Fresh mint leaves for garnish
Instructions:
  1. Brown the Beef: In a heavy pot, heat olive oil over medium-high heat. Sear beef cubes until browned on all sides.
  2. Aromatic Base: Add onion, garlic, and ginger; sauté until soft.
  3. Combine: Stir in tomatoes, apricots, and the (Umimi) blend. Pour in beef broth and add smoky mix if desired.
  4. Simmer: Cover and cook on low heat for 1.5–2 hours until the beef is tender and flavours meld.
  5. Serve: Garnish with fresh mint and serve with couscous or flatbread.
