Beef & Vegetable Medley
Ingredients:
- 600 g beef stew meat, cut into 2-cm cubes
- 1 large onion, roughly chopped
- 3 garlic cloves, minced
- 1 green bell pepper, diced
- 2 tbsp (OsoNri) spice blend
- 1 cup beef broth
- 1 tbsp olive oil
- Optional: A pinch of smoky mix
- Fresh parsley for garnish
Instructions:
- Sear Beef: In a heavy pot, heat olive oil over medium-high heat. Brown the beef cubes on all sides.
- Add Aromatics: Stir in the onion, garlic, and bell pepper; cook until softened.
- Season & Simmer: Sprinkle the (OsoNri) blend over the beef. Add the beef broth and, if using, a pinch of smoky mix. Cover and simmer on low heat for 1.5–2 hours until the beef is tender.
- Finish: Garnish with fresh parsley and serve with rice or crusty bread.
