Chicken Curry

Ingredients: 
  • 4 bone-in, skin-on chicken thighs
  • 1 large onion, chopped
  • 3 garlic cloves, minced
  • 2 tomatoes, chopped (or 400 g canned)
  • 2 tbsp (OseOji Okpoo) spice blend
  • 1 cup chicken broth
  • 1 tbsp oil
  • Optional: A pinch of smoky mix
  • Fresh cilantro for garnish
Instructions:
  1. Brown Chicken: In a deep skillet, heat oil over medium-high heat and brown the chicken thighs on both sides.
  2. Sauté Aromatics: Add onion and garlic; cook until soft.
  3. Build Curry: Stir in tomatoes and the spice blend. Pour in chicken broth and bring to a simmer.
  4. Simmer: Cover and cook on low heat for 25–30 minutes until the chicken is cooked through.
  5. Finish: Optionally mix in smoky flavour, garnish with cilantro, and serve with rice or flatbread.
