Chicken Jalfrezi
Ingredients:
- 4 boneless, skinless chicken thighs, cut into strips
- 1 large onion, sliced
- 1 red bell pepper, sliced
- 2 garlic cloves, minced
- 1 tbsp grated ginger
- 2 tomatoes, diced (or 400 g canned diced tomatoes)
- 2 tbsp (Umimi) spice blend
- 1/2 cup chicken broth
- 1 tbsp vegetable oil
- Optional: A dash of smoky mix
- Fresh basil for garnish
Instructions:
- Sauté Chicken: In a wok, heat vegetable oil over high heat. Add chicken strips and stir-fry until lightly browned.
- Add Veggies: Add onion, bell pepper, garlic, and ginger; stir-fry for 3 minutes.
- Combine: Stir in tomatoes and the (Umimi) blend; add chicken broth and optional smoky mix.
- Simmer: Cook for another 5 minutes until the chicken is fully cooked and flavours meld.
- Serve: Garnish with fresh basil and serve with steamed rice.
