Citrus Grilled Fish

Ingredients: 
  • Whole fish (e.g., snapper or tilapia)
  • 2 tbsp (Sutu Okpoo) spice blend
  • 1 tbsp olive oil
  • Juice and zest of 1 lemon
  • Salt and pepper, to taste
  • Optional: A light brush of smoky mix
Instructions:
  1. Marinate: Rub fish fillets with olive oil, lemon zest and juice, (Sutu Okpoo) blend, salt, pepper, and optional smoky mix. Let marinate for 10 minutes.
  2. Grill: Grill on medium-high heat for 3–4 minutes per side until the fish is opaque and flaky.
  3. Serve: Serve with extra lemon wedges and a side of steamed greens.
