Coconut Pork Roast
Ingredients:
- 1 kg pork shoulder or loin
- 1 large onion, quartered
- 3 garlic cloves, smashed
- 2 tbsp (NtuUto) spice blend
- 1 cup chicken broth
- 1 can (400 ml) coconut milk
- 1 tbsp olive oil
- Optional: A sprinkle of smoky mix
Instructions:
- Season & Sear: Rub the pork with the (NtuUto) blend. In a roasting pan, heat olive oil and sear the pork on all sides.
- Add Aromatics: Place onion and garlic around the meat.
- Roast: Pour in chicken broth and coconut milk. Cover with foil and roast in a preheated oven at 180°C (350°F) for 2–2.5 hours until tender.
- Finish: Optionally sprinkle a bit of smoky mix before serving with steamed vegetables or rice.
