Fish en Papillote

Ingredients: 
  • Whole fish (e.g., cod or halibut)
  • 1 small onion, thinly sliced
  • 2 garlic cloves, minced
  • 2 tbsp (OseOji Okpoo) spice blend
  • 1 tbsp olive oil
  • Salt and pepper, to taste
  • Parchment paper sheets
  • Optional: A light sprinkle of smoky mix
Instructions:
  1. Prepare Parcels: Place each fish fillet on a large sheet of parchment paper.
  2. Season: Drizzle with olive oil, sprinkle with the spice blend, garlic, and onion slices. Season with salt and pepper, and add a dash of smoky mix if desired.
  3. Wrap: Fold the parchment into a sealed packet.
  4. Bake: Place on a baking tray in a preheated oven at 200°C (400°F) for 12–15 minutes until the fish is flaky.
  5. Serve: Open packets and serve immediately with steamed vegetables.
