Fish en Papillote

Ingredients: 
  • Whole fish (such as cod or halibut)
  • 1 small red onion, thinly sliced
  • 1 garlic clove, minced
  • 2 tbsp (Sutu Okpoo) spice blend
  • 1 tbsp olive oil
  • Salt and pepper, to taste
  • Parchment paper sheets
  • Optional: A dash of smoky mix
  • Fresh dill for garnish
Instructions:
  1. Preheat Oven: Set oven to 200°C (400°F).
  2. Assemble Parcels: Place each fish fillet on a parchment sheet. Drizzle with olive oil, then sprinkle with (Sutu Okpoo) blend, garlic, onion slices, salt, pepper, and optional smoky mix.
  3. Seal & Bake: Fold the parchment to create a sealed packet. Place on a baking tray and bake for 12–15 minutes.
  4. Serve: Open the packets carefully, garnish with fresh dill, and serve with a side salad.
