Grilled Chicken Salad with Citrus Vinaigrette

Ingredients: 
  • 500 g boneless, skinless chicken breasts
  • 2 tbsp (Sutu Okpoo) spice blend
  • 1 tbsp olive oil
  • Mixed salad greens (lettuce, arugula, spinach)
  • 1 orange, segmented
  • 1/2 red onion, thinly sliced
  • For Vinaigrette: Juice of 1 lemon, 2 tbsp olive oil, salt and pepper
  • Optional: A light brush of smoky mix on the chicken
Instructions:
  1. Season Chicken: Rub chicken breasts with (Sutu Okpoo) spice blend and olive oil (plus optional smoky mix). Let sit for 15 minutes.
  2. Grill: Grill chicken over medium-high heat for 5–6 minutes per side until cooked through; slice thinly.
  3. Assemble Salad: In a bowl, combine salad greens, orange segments, and red onion.
  4. Dress: Whisk together lemon juice, olive oil, salt, and pepper. Drizzle over the salad.
  5. Serve: Top with grilled chicken slices and serve immediately.
