Grilled Chicken Salad with Citrus Vinaigrette
Ingredients:
- 500 g boneless, skinless chicken breasts
- 2 tbsp (Sutu Okpoo) spice blend
- 1 tbsp olive oil
- Mixed salad greens (lettuce, arugula, spinach)
- 1 orange, segmented
- 1/2 red onion, thinly sliced
- For Vinaigrette: Juice of 1 lemon, 2 tbsp olive oil, salt and pepper
- Optional: A light brush of smoky mix on the chicken
Instructions:
- Season Chicken: Rub chicken breasts with (Sutu Okpoo) spice blend and olive oil (plus optional smoky mix). Let sit for 15 minutes.
- Grill: Grill chicken over medium-high heat for 5–6 minutes per side until cooked through; slice thinly.
- Assemble Salad: In a bowl, combine salad greens, orange segments, and red onion.
- Dress: Whisk together lemon juice, olive oil, salt, and pepper. Drizzle over the salad.
- Serve: Top with grilled chicken slices and serve immediately.
