Lamb Rogan Josh

Ingredients: 
  • 600 g lamb shoulder, cut into cubes
  • 1 large onion, finely chopped
  • 3 garlic cloves, minced
  • 1 tbsp grated ginger
  • 2 tomatoes, pureed (or 400 g canned tomato puree)
  • 2 tbsp (Umimi) spice blend
  • 1 cup lamb broth
  • 1 tbsp olive oil
  • Optional: A pinch of smoky mix
  • Fresh cilantro for garnish
Instructions:
  1. Brown Lamb: In a heavy pot, heat olive oil over medium-high heat and brown lamb cubes.
  2. Build Flavour: Add onion, garlic, and ginger; sauté until golden.
  3. Combine: Stir in tomato puree and the (Umimi) blend (plus optional smoky mix). Pour in lamb broth.
  4. Simmer: Cover and simmer on low heat for 1.5–2 hours until lamb is tender.
  5. Serve: Garnish with cilantro and serve with steamed rice or naan.
