Lamb Rogan Josh
Ingredients:
- 600 g lamb shoulder, cut into cubes
- 1 large onion, finely chopped
- 3 garlic cloves, minced
- 1 tbsp grated ginger
- 2 tomatoes, pureed (or 400 g canned tomato puree)
- 2 tbsp (Umimi) spice blend
- 1 cup lamb broth
- 1 tbsp olive oil
- Optional: A pinch of smoky mix
- Fresh cilantro for garnish
Instructions:
- Brown Lamb: In a heavy pot, heat olive oil over medium-high heat and brown lamb cubes.
- Build Flavour: Add onion, garlic, and ginger; sauté until golden.
- Combine: Stir in tomato puree and the (Umimi) blend (plus optional smoky mix). Pour in lamb broth.
- Simmer: Cover and simmer on low heat for 1.5–2 hours until lamb is tender.
- Serve: Garnish with cilantro and serve with steamed rice or naan.
