Pork Belly Ramen

Ingredients: 
  • 600 g pork belly, skin scored
  • 1 large onion, quartered
  • 3 garlic cloves, smashed
  • 2 tbsp (Umimi) spice blend
  • 4 cups chicken broth
  • 200 g ramen noodles
  • 1 tbsp olive oil
  • Optional: A dash of smoky mix
  • Sliced green onions and soft-boiled eggs for garnish
Instructions:
  1. Sear Pork Belly: Rub pork belly with (Umimi) blend and smoky mix, then sear in olive oil until browned.
  2. Simmer: Place pork, onion, and garlic in a pot; add chicken broth and simmer for 1.5 hours until tender.
  3. Prepare Noodles: Cook ramen noodles according to package instructions.
  4. Assemble: Slice pork belly and serve atop noodles in a bowl of broth.
  5. Garnish: Top with green onions and soft-boiled eggs.
