Pork Stir-Fry with Bok Choy
Ingredients:
- 500 g pork tenderloin, thinly sliced
- 1 large onion, sliced
- 3 garlic cloves, minced
- 2 tbsp (Sutu Okpoo) spice blend
- 1 head baby bok choy, halved
- 1 red bell pepper, julienned
- 2 tbsp vegetable oil
- 1/2 cup chicken broth
- Optional: A sprinkle of smoky mix
- Lime wedges for serving
Instructions:
- Marinate Pork: Toss pork slices with half the (Sutu Okpoo) blend.
- Stir-Fry: In a wok over high heat, add oil, then stir-fry pork until nearly cooked. Remove and set aside.
- Veggies: In the same wok, add onion, garlic, bell pepper, and bok choy. Stir-fry for 3 minutes.
- Combine: Return pork to the wok, add remaining spice blend and chicken broth (plus smoky mix, if using), and cook for another 2 minutes.
- Finish: Squeeze lime over the dish and serve immediately.
