Pork Stir-Fry with Bok Choy

Ingredients: 
  • 500 g pork tenderloin, thinly sliced
  • 1 large onion, sliced
  • 3 garlic cloves, minced
  • 2 tbsp (Sutu Okpoo) spice blend
  • 1 head baby bok choy, halved
  • 1 red bell pepper, julienned
  • 2 tbsp vegetable oil
  • 1/2 cup chicken broth
  • Optional: A sprinkle of smoky mix
  • Lime wedges for serving
Instructions:
  1. Marinate Pork: Toss pork slices with half the (Sutu Okpoo) blend.
  2. Stir-Fry: In a wok over high heat, add oil, then stir-fry pork until nearly cooked. Remove and set aside.
  3. Veggies: In the same wok, add onion, garlic, bell pepper, and bok choy. Stir-fry for 3 minutes.
  4. Combine: Return pork to the wok, add remaining spice blend and chicken broth (plus smoky mix, if using), and cook for another 2 minutes.
  5. Finish: Squeeze lime over the dish and serve immediately.
