Spiced Beef & Tomato Stew
Ingredients:
- 600 g beef stew meat, cut into cubes
- 1 large onion, roughly chopped
- 3 garlic cloves, minced
- 2 tomatoes, chopped (or 400 g canned diced tomatoes)
- 2 tbsp (Ofve Opupa Okpoo) spice blend
- 1 cup beef broth
- 1 tbsp oil
- Optional: A pinch of smoky mix
Instructions:
- Brown the Meat: Heat oil in a heavy pot over medium-high heat. Brown beef cubes on all sides.
- Sauté Aromatics: Add the onion and garlic; cook until softened.
- Simmer: Stir in the spice blend and tomatoes, then pour in the beef broth. Bring to a boil, reduce heat, and cover.
- Cook: Let simmer for 1.5–2 hours until the beef is tender.
- Finish: Optionally, stir in a pinch of smoky mix before serving. Enjoy with rice or crusty bread.
