Spiced Fish Curry
Ingredients:
- 4 white fish fillets (snapper or tilapia work well)
- 1 large onion, chopped
- 2 garlic cloves, minced
- 2 tomatoes, chopped (or 400 g canned)
- 2 tbsp (Ofve Opupa Okpoo) spice blend
- 1 cup fish or vegetable broth
- 1 tbsp oil
- Optional: A dash of smoky mix
- Fresh cilantro for garnish
Instructions:
- Sauté: In a large pot, heat oil over medium heat; sauté onion and garlic until translucent.
- Combine: Stir in tomatoes and the spice blend, then add the broth.
- Simmer: Gently add the fish fillets, cover, and simmer for 10 minutes until the fish is cooked through.
- Finish: Optionally stir in smoky mix, garnish with cilantro, and serve with steamed rice.
