Spiced Fish Curry

Ingredients: 
  • 4 white fish fillets (snapper or tilapia work well)
  • 1 large onion, chopped
  • 2 garlic cloves, minced
  • 2 tomatoes, chopped (or 400 g canned)
  • 2 tbsp (Ofve Opupa Okpoo) spice blend
  • 1 cup fish or vegetable broth
  • 1 tbsp oil
  • Optional: A dash of smoky mix
  • Fresh cilantro for garnish
Instructions:
  1. Sauté: In a large pot, heat oil over medium heat; sauté onion and garlic until translucent.
  2. Combine: Stir in tomatoes and the spice blend, then add the broth.
  3. Simmer: Gently add the fish fillets, cover, and simmer for 10 minutes until the fish is cooked through.
  4. Finish: Optionally stir in smoky mix, garnish with cilantro, and serve with steamed rice.
