Spiced Fish Tagine
Ingredients:
- Whole fish or fillets (such as cod or halibut)
- 1 large onion, sliced
- 2 garlic cloves, minced
- 2 tomatoes, chopped (or 400 g canned diced tomatoes)
- 2 tbsp (Umimi) spice blend
- 1 cup fish or vegetable broth
- 1 tbsp olive oil
- Optional: A dash of smoky mix
- Fresh basil for garnish
Instructions:
- Prepare Base: In a tagine or deep pot, heat olive oil and sauté onion and garlic until soft.
- Layer Flavours: Add tomatoes and the (Umimi) blend, stirring for 1 minute. Pour in broth and add optional smoky mix.
- Add Fish: Nestle fish fillets into the sauce, cover, and simmer for 10 minutes until fish is tender.
- Serve: Garnish with fresh basil and serve with couscous.
