Spiced Sweet Potato & Chickpea Curry
Ingredients:
- 2 large sweet potatoes, peeled and cubed
- 1 can (400 g) chickpeas, drained
- 1 large onion, chopped
- 2 garlic cloves, minced
- 2 tbsp (Sutu Okpoo) spice blend
- 1 can (400 g) diced tomatoes
- 1 cup vegetable broth
- 1 tbsp olive oil
- Optional: A pinch of smoky mix
- Fresh spinach and coriander for garnish
Instructions:
- Sauté Base: In a large pot, heat olive oil over medium heat; sauté onion and garlic until soft.
- Add Veggies: Stir in sweet potatoes, chickpeas, diced tomatoes, and the (Sutu Okpoo) blend (plus optional smoky mix).
- Simmer: Pour in vegetable broth and simmer for 25–30 minutes until sweet potatoes are tender.
- Finish: Stir in a handful of fresh spinach, garnish with coriander, and serve with rice.
