Spiced Vegetable Stew
Ingredients:
- 1 large onion, chopped
- 2 garlic cloves, minced
- 1 red bell pepper, diced
- 2 tomatoes, chopped (or 400 g canned)
- 1 cup mixed vegetables (e.g., zucchini, carrots, peas)
- 2 tbsp (Ofve Opupa Okpoo) spice blend
- 1 cup vegetable broth
- 1 tbsp olive oil
- Optional: A dash of smoky mix
- Fresh basil for garnish
Instructions:
- Sauté: In a pot, heat olive oil over medium heat; cook onion and garlic until soft.
- Add Veggies: Stir in bell pepper, tomatoes, and mixed vegetables.
- Simmer: Add the spice blend and vegetable broth; bring to a simmer and cook for 15 minutes.
- Finish: Optionally stir in smoky mix, garnish with basil, and serve over rice or with crusty bread.
