Suya

Ingredients: Meat, Ifvenli mixed spice seasoning, (Optional: spices, herbs and vegetables of choice)

Utensil: Optional skewers

  1. If using wooden skewers, soak them in water for a minimum of 30 mins. If not using skewers, lay the prepare meat flat on an oven rack.
  2. Cut the meat into very thin flat slices.
  3. Place meat on a flat surface like a tray
  4. Pour the ifvenli spice generously over on both sides of the meat, ensuring total coverage.
  5. Place slices of the coated meat on each skewer.
  6. Brush the skewered meat with oil.
  7. Place them on an oven rack or oven tray brushed with oil to avoid sticking.
  8. Grill/roast in a 120 degrees C oven until cooked to your choice, on each side.
  9. Half way through the cooking, flip skewers/meat to the other side to ensure even cooking.
  10. Sprinkle ifvenli spice on the cooked meat.
  11. Serve straight or with some vegetables like onions, cabbage.

Style options:

  • You can use chicken, fish or vegetables like potatoes in place of meat.
  • You can add other spices or herbs in addition to ifvenli spice.
  • You can use an oven tray lined baking paper or with aluminium foil brushed with oil.
  • You can add other things like sliced onions, tomatoes, peppers, etc. in between each piece of meat before grilling/roasting.
