Sweet Potato & Black Bean Stew

Ingredients: 
  • 2 large sweet potatoes, peeled and cubed
  • 1 can (400 g) black beans, drained and rinsed
  • 1 large onion, chopped
  • 2 garlic cloves, minced
  • 2 tomatoes, chopped (or 400 g canned)
  • 2 tbsp (OseOji Okpoo) spice blend
  • 3 cups vegetable broth
  • 1 tbsp olive oil
  • Salt and pepper, to taste
  • Optional: A pinch of smoky mix
  • Fresh cilantro for garnish
Instructions:
  1. Sauté: In a large pot, heat olive oil over medium heat; sauté onion and garlic until soft.
  2. Combine: Add sweet potatoes, tomatoes, and the spice blend. Pour in vegetable broth.
  3. Simmer: Bring to a boil, then reduce heat and simmer for 25–30 minutes until sweet potatoes are tender.
  4. Finish: Stir in black beans, add optional smoky mix, season with salt and pepper, garnish with cilantro, and serve.
