Turkey Stuffed Zucchini Boats

Ingredients: 
  • 500 g ground turkey
  • 4 medium zucchinis, halved lengthwise and seeded
  • 1 small onion, finely chopped
  • 2 garlic cloves, minced
  • 2 tbsp (Sutu Okpoo) spice blend
  • 1/2 cup diced tomatoes
  • 1 tbsp olive oil
  • Salt and pepper, to taste
  • Optional: A dash of smoky mix
  • Fresh basil for garnish
Instructions:
  1. Preheat Oven: Set oven to 190°C (375°F).
  2. Prepare Filling: In a skillet, heat olive oil over medium heat. Sauté onion and garlic until soft; add ground turkey and cook until lightly browned. Stir in diced tomatoes, (Sutu Okpoo) blend, salt, pepper, and optional smoky mix.
  3. Stuff Zucchinis: Spoon the turkey mixture into the zucchini halves.
  4. Bake: Place in a baking dish and bake for 25 minutes until zucchinis are tender.
  5. Serve: Garnish with fresh basil and serve warm.
