Vegan Coconut Lentil Soup
Ingredients:
- 1 cup red lentils, rinsed
- 1 large onion, chopped
- 2 garlic cloves, minced
- 2 tbsp (NtuUto) spice blend
- 1 can (400 ml) coconut milk
- 4 cups vegetable broth
- 1 tbsp oil
- Salt and pepper to taste
- Fresh cilantro for garnish
Instructions:
- Sauté: In a large pot, heat oil over medium heat; sauté onion and garlic until soft.
- Combine: Add lentils and (NtuUto) blend; stir for 1 minute.
- Simmer: Pour in coconut milk and vegetable broth; bring to a boil and then reduce heat. Simmer for 20–25 minutes until lentils are soft.
- Finish: Season with salt and pepper, garnish with cilantro, and serve with crusty bread.
