Vegan Coconut Stir-Fry with Tofu
Ingredients:
- 400 g firm tofu, pressed and cubed
- 1 large onion, sliced
- 1 red bell pepper, sliced
- 1 cup snap peas or broccoli florets
- 2 tbsp (NtuUto) spice blend
- 2 tbsp coconut oil (or vegetable oil)
- 1/2 cup vegetable broth
- Optional: A dash of smoky mix
- Fresh basil or cilantro for garnish
Instructions:
- Sauté Tofu: In a wok or large skillet, heat 1 tbsp oil over medium-high heat. Sauté tofu cubes until lightly browned; remove and set aside.
- Stir-Fry Veggies: Add remaining oil and sauté onion, bell pepper, and snap peas (or broccoli) until crisp-tender.
- Combine: Return tofu to the pan along with the (NtuUto) blend. Pour in vegetable broth and stir-fry for 2 minutes.
- Finish: Optionally add smoky mix, garnish with fresh herbs, and serve over rice or noodles.
