Vegan Coconut Stir-Fry with Tofu

Ingredients: 
  • 400 g firm tofu, pressed and cubed
  • 1 large onion, sliced
  • 1 red bell pepper, sliced
  • 1 cup snap peas or broccoli florets
  • 2 tbsp (NtuUto) spice blend
  • 2 tbsp coconut oil (or vegetable oil)
  • 1/2 cup vegetable broth
  • Optional: A dash of smoky mix
  • Fresh basil or cilantro for garnish
Instructions:
  1. Sauté Tofu: In a wok or large skillet, heat 1 tbsp oil over medium-high heat. Sauté tofu cubes until lightly browned; remove and set aside.
  2. Stir-Fry Veggies: Add remaining oil and sauté onion, bell pepper, and snap peas (or broccoli) until crisp-tender.
  3. Combine: Return tofu to the pan along with the (NtuUto) blend. Pour in vegetable broth and stir-fry for 2 minutes.
  4. Finish: Optionally add smoky mix, garnish with fresh herbs, and serve over rice or noodles.
