Vegan Jackfruit Curry
Ingredients:
- 1 can young green jackfruit in brine, drained and shredded
- 1 large onion, chopped
- 2 garlic cloves, minced
- 2 tomatoes, chopped (or 400 g canned diced tomatoes)
- 2 tbsp (Umimi) spice blend
- 1 cup vegetable broth
- 1 tbsp coconut oil
- Optional: A dash of smoky mix
- Fresh basil or cilantro for garnish
Instructions:
- Prepare Jackfruit: Rinse and shred jackfruit pieces.
- Sauté: In a pot, heat coconut oil and sauté onion and garlic until translucent.
- Combine: Stir in tomatoes and the (Umimi) blend, add jackfruit and vegetable broth, plus optional smoky mix.
- Simmer: Let it simmer for 20 minutes so flavours meld.
- Serve: Garnish with fresh herbs and serve with rice.
