Vegan Lentil Stew

Ingredients: 
  • 1 cup red lentils, rinsed
  • 1 large onion, chopped
  • 2 garlic cloves, minced
  • 1 cup chopped tomatoes (fresh or canned)
  • 2 tbsp olive oil
  • 2 tbsp EhuruAja spice blend
  • 3 cups water or vegetable broth
  • Optional: A dash of smoky mix
Instructions:
  1. Sauté: Heat olive oil in a pot; cook onion and garlic until soft.
  2. Spice: Stir in EhuruAja and tomatoes; cook for 1 minute.
  3. Lentils: Add lentils and broth; bring to a boil.
  4. Simmer: Reduce heat and simmer for 20–25 minutes until lentils are tender and the stew thickens.
  5. Finish: Optionally add smoky mix; serve hot with crusty bread or rice.
