Vegan Lentil Stew
Ingredients:
- 1 cup red lentils, rinsed
- 1 large onion, chopped
- 2 garlic cloves, minced
- 1 cup chopped tomatoes (fresh or canned)
- 2 tbsp olive oil
- 2 tbsp EhuruAja spice blend
- 3 cups water or vegetable broth
- Optional: A dash of smoky mix
Instructions:
- Sauté: Heat olive oil in a pot; cook onion and garlic until soft.
- Spice: Stir in EhuruAja and tomatoes; cook for 1 minute.
- Lentils: Add lentils and broth; bring to a boil.
- Simmer: Reduce heat and simmer for 20–25 minutes until lentils are tender and the stew thickens.
- Finish: Optionally add smoky mix; serve hot with crusty bread or rice.
