Vegan Spiced Lentil & Tomato Soup

Ingredients: 
  • 1 cup red lentils, rinsed
  • 1 large onion, chopped
  • 2 garlic cloves, minced
  • 2 tomatoes, chopped (or 400 g canned)
  • 2 tbsp (Ofve Opupa Okpoo) spice blend
  • 4 cups vegetable broth
  • 1 tbsp olive oil
  • Salt and pepper to taste
  • Fresh cilantro for garnish
Instructions:
  1. Sauté: In a large pot, heat olive oil over medium heat; sauté onion and garlic until soft.
  2. Combine: Add tomatoes and the spice blend; stir for 1 minute.
  3. Simmer: Add lentils and vegetable broth; bring to a boil, then reduce heat and simmer for 20–25 minutes.
  4. Finish: Season with salt and pepper, garnish with cilantro, and serve with crusty bread.
