Vegan Spiced Lentil & Tomato Soup
Ingredients:
- 1 cup red lentils, rinsed
- 1 large onion, chopped
- 2 garlic cloves, minced
- 2 tomatoes, chopped (or 400 g canned)
- 2 tbsp (Ofve Opupa Okpoo) spice blend
- 4 cups vegetable broth
- 1 tbsp olive oil
- Salt and pepper to taste
- Fresh cilantro for garnish
Instructions:
- Sauté: In a large pot, heat olive oil over medium heat; sauté onion and garlic until soft.
- Combine: Add tomatoes and the spice blend; stir for 1 minute.
- Simmer: Add lentils and vegetable broth; bring to a boil, then reduce heat and simmer for 20–25 minutes.
- Finish: Season with salt and pepper, garnish with cilantro, and serve with crusty bread.
