Vegan Spiced Tofu & Veggie Stir-Fry

Ingredients: 
  • 400 g firm tofu, pressed and cubed
  • 1 large onion, sliced
  • 1 red bell pepper, sliced
  • 1 cup broccoli florets or snap peas
  • 2 tbsp (Ofve Opupa Okpoo) spice blend
  • 2 tbsp vegetable oil (or coconut oil)
  • 1/2 cup vegetable broth
  • Optional: A dash of smoky mix
  • Fresh basil or cilantro for garnish
Instructions:
  1. Brown Tofu: In a wok or large skillet, heat 1 tbsp oil over medium-high heat; add tofu cubes and fry until golden. Remove and set aside.
  2. Stir-Fry Veggies: Add remaining oil and stir-fry onion, bell pepper, and broccoli (or snap peas) until crisp-tender.
  3. Combine: Return tofu to the pan and add the spice blend; pour in vegetable broth and stir-fry for an additional 2 minutes.
  4. Finish: Optionally add smoky mix, garnish with fresh herbs, and serve over rice or noodles.
