Vegan Spiced Tofu & Veggie Stir-Fry
Ingredients:
- 400 g firm tofu, pressed and cubed
- 1 large onion, sliced
- 1 red bell pepper, sliced
- 1 cup broccoli florets or snap peas
- 2 tbsp (Ofve Opupa Okpoo) spice blend
- 2 tbsp vegetable oil (or coconut oil)
- 1/2 cup vegetable broth
- Optional: A dash of smoky mix
- Fresh basil or cilantro for garnish
Instructions:
- Brown Tofu: In a wok or large skillet, heat 1 tbsp oil over medium-high heat; add tofu cubes and fry until golden. Remove and set aside.
- Stir-Fry Veggies: Add remaining oil and stir-fry onion, bell pepper, and broccoli (or snap peas) until crisp-tender.
- Combine: Return tofu to the pan and add the spice blend; pour in vegetable broth and stir-fry for an additional 2 minutes.
- Finish: Optionally add smoky mix, garnish with fresh herbs, and serve over rice or noodles.
