Vegan Stuffed Zucchini Boats
Ingredients:
- 4 medium zucchinis, halved lengthwise and seeded
- 1 can (400 g) chickpeas, roughly mashed
- 1 small onion, finely chopped
- 2 garlic cloves, minced
- 2 tbsp (OsoNri) spice blend
- 1 tomato, diced
- 1 tbsp olive oil
- Salt and pepper, to taste
- Optional: A dash of smoky mix
- Fresh basil for garnish
Instructions:
- Preheat Oven: Heat oven to 190°C (375°F).
- Prepare Filling: In a bowl, mix mashed chickpeas, onion, garlic, diced tomato, (OsoNri) blend, salt, pepper, and optional smoky mix.
- Stuff: Spoon the filling into the zucchini halves.
- Bake: Place zucchini boats on a baking sheet and bake for 25 minutes until tender.
- Finish: Garnish with fresh basil and serve as a hearty vegan main.
