Vegan Stuffed Zucchini Boats

Ingredients: 
  • 4 medium zucchinis, halved lengthwise and seeded
  • 1 can (400 g) chickpeas, roughly mashed
  • 1 small onion, finely chopped
  • 2 garlic cloves, minced
  • 2 tbsp (OsoNri) spice blend
  • 1 tomato, diced
  • 1 tbsp olive oil
  • Salt and pepper, to taste
  • Optional: A dash of smoky mix
  • Fresh basil for garnish
Instructions:
  1. Preheat Oven: Heat oven to 190°C (375°F).
  2. Prepare Filling: In a bowl, mix mashed chickpeas, onion, garlic, diced tomato, (OsoNri) blend, salt, pepper, and optional smoky mix.
  3. Stuff: Spoon the filling into the zucchini halves.
  4. Bake: Place zucchini boats on a baking sheet and bake for 25 minutes until tender.
  5. Finish: Garnish with fresh basil and serve as a hearty vegan main.
