Vegan Sweet Potato Stew
Ingredients:
- 2 large sweet potatoes, peeled and cubed
- 1 can (400 g) diced tomatoes
- 1 large onion, chopped
- 2 garlic cloves, minced
- 2 tbsp (IheAzu) spice blend
- 3 cups vegetable broth
- 1 tbsp olive oil
- Spinach leaves for garnish
Instructions:
- Sauté Aromatics: In a large pot, heat olive oil over medium heat. Add onion and garlic; sauté until soft.
- Add Sweet Potatoes: Stir in the cubed sweet potatoes and (IheAzu) spice blend.
- Simmer: Pour in diced tomatoes and vegetable broth. Bring to a boil, then reduce heat.
- Cook: Cover and simmer for 25–30 minutes until sweet potatoes are tender.
- Finish: Stir in a handful of spinach until wilted. Serve hot with crusty bread.
