Vegan Tomato & Lentil Stew

Ingredients: 
  • 1 cup red lentils, rinsed
  • 1 large onion, chopped
  • 2 garlic cloves, minced
  • 2 tomatoes, chopped (or 400 g canned)
  • 2 tbsp (OsoNri) spice blend
  • 4 cups vegetable broth
  • 1 tbsp olive oil
  • Salt and pepper, to taste
  • Optional: A pinch of smoky mix
  • Fresh cilantro for garnish
Instructions:
  1. Sauté: In a large pot, heat olive oil over medium heat. Sauté onion and garlic until soft.
  2. Combine: Add tomatoes and the (OsoNri) blend; stir for 1 minute.
  3. Simmer: Pour in red lentils and vegetable broth. Bring to a boil, then reduce heat and simmer for 25 minutes until lentils are tender.
  4. Finish: Season with salt, pepper, and optional smoky mix. Garnish with cilantro and serve with crusty bread.
