Vegan Veggie Bowl

Ingredients: 
  • 1 cup mixed vegetables (broccoli, carrots, bell peppers), chopped
  • 1 large onion, sliced
  • 2 garlic cloves, minced
  • 2 tbsp olive oil
  • 2 tbsp EhuruAja spice blend
  • ½ cup water or vegetable broth
  • Optional: Pinch of smoky mix
  • Cooked quinoa or rice to serve
Instructions:
  1. Sauté: In a pan, heat olive oil; sauté onion and garlic until soft.
  2. Add Veggies: Mix in the chopped vegetables and sprinkle with EhuruAja.
  3. Simmer: Add water/broth, cover, and cook 7–10 minutes until tender.
  4. Finish: Stir in smoky mix if desired; serve over quinoa or rice.
