Vegetable Fritters with Yogurt Dip

Ingredients: 
  • 1 cup grated zucchini
  • 1 cup grated carrot
  • 1 small onion, finely grated
  • 2 tbsp (Sutu Okpoo) spice blend
  • 1/2 cup gram flour
  • Salt, to taste
  • 2 tbsp olive oil (plus extra for frying)
  • For Dip: 1 cup plain yogurt, a squeeze of lemon, salt, and pepper
  • Optional: A dash of smoky mix in the batter
Instructions:
  1. Mix Fritter Batter: Combine grated zucchini, carrot, onion, gram flour, (Sutu Okpoo) blend, salt, olive oil, and optional smoky mix.
  2. Form & Fry: Heat oil in a pan over medium heat. Spoon small fritters and flatten slightly; fry for 3–4 minutes per side until golden.
  3. Prepare Dip: Mix yogurt with lemon juice, salt, and pepper.
  4. Serve: Serve warm fritters with the yogurt dip and garnish with fresh herbs.
