Vegetable Korma with Cashews

Ingredients: 
  • 1 large onion, sliced
  • 2 garlic cloves, minced
  • 1 red bell pepper, chopped
  • 1 cup cauliflower florets
  • 1 cup diced carrots
  • 2 tbsp (Umimi) spice blend
  • 1 cup tomato puree
  • 1/2 cup cashew cream (blend 1/2 cup cashews with water)
  • 1 cup vegetable broth
  • 1 tbsp vegetable oil
  • Optional: A pinch of smoky mix
  • Fresh cilantro for garnish
Instructions:
  1. Sauté: Heat oil in a large pan and sauté onion and garlic until golden.
  2. Add Vegetables: Stir in bell pepper, cauliflower, and carrots; cook for 5 minutes.
  3. Combine: Add tomato puree, the (Umimi) blend, and optional smoky mix. Pour in vegetable broth and simmer for 15 minutes.
  4. Finish: Stir in cashew cream, heat through, and garnish with cilantro. Serve with steamed rice or naan.
