Vegetable Korma with Cashews
Ingredients:
- 1 large onion, sliced
- 2 garlic cloves, minced
- 1 red bell pepper, chopped
- 1 cup cauliflower florets
- 1 cup diced carrots
- 2 tbsp (Umimi) spice blend
- 1 cup tomato puree
- 1/2 cup cashew cream (blend 1/2 cup cashews with water)
- 1 cup vegetable broth
- 1 tbsp vegetable oil
- Optional: A pinch of smoky mix
- Fresh cilantro for garnish
Instructions:
- Sauté: Heat oil in a large pan and sauté onion and garlic until golden.
- Add Vegetables: Stir in bell pepper, cauliflower, and carrots; cook for 5 minutes.
- Combine: Add tomato puree, the (Umimi) blend, and optional smoky mix. Pour in vegetable broth and simmer for 15 minutes.
- Finish: Stir in cashew cream, heat through, and garnish with cilantro. Serve with steamed rice or naan.
