Vegetable Stir-Fry

Ingredients: 
  • 1 large onion, sliced
  • 1 bell pepper, sliced
  • 1 zucchini, sliced
  • 1 cup cherry tomatoes (halved)
  • 2 tbsp olive oil
  • 2 tbsp EhuruAja spice blend
  • ½ cup water or vegetable broth
  • Optional: Pinch of smoky mix
Instructions:
  1. Heat: Warm olive oil in a large pan over medium heat.
  2. Sauté: Add onion (and garlic if desired) until soft.
  3. Combine: Toss in bell pepper, zucchini, and tomatoes; sprinkle with EhuruAja.
  4. Simmer: Pour in water/broth, cover, and cook 5–7 minutes until veggies are tender.
  5. Finish: Stir in smoky mix if using; serve over rice or quinoa.
