Vegetable Stir-Fry
Ingredients:
- 1 large onion, sliced
- 1 bell pepper, sliced
- 1 zucchini, sliced
- 1 cup cherry tomatoes (halved)
- 2 tbsp olive oil
- 2 tbsp EhuruAja spice blend
- ½ cup water or vegetable broth
- Optional: Pinch of smoky mix
Instructions:
- Heat: Warm olive oil in a large pan over medium heat.
- Sauté: Add onion (and garlic if desired) until soft.
- Combine: Toss in bell pepper, zucchini, and tomatoes; sprinkle with EhuruAja.
- Simmer: Pour in water/broth, cover, and cook 5–7 minutes until veggies are tender.
- Finish: Stir in smoky mix if using; serve over rice or quinoa.
